Brief Description

This module gives students the opportunity to build upon knowledge gained in the first year, and focus upon the wider concepts of the management of food and beverage provision.

Indicative Syllabus

This module includes the delivery and assessment of planning and operational management issues such as; food production methods; the branding and theming of food and beverage services and products; menu costing and pricing techniques; consumer trends and the meal experience; aesthetics and service; beverage management and gastronomy.

Learning Outcomes

A student passing this module should be able to:

  1. Apply management tools that contribute to the success of food and beverage provision.
  2. Analyse solutions to a variety of food and beverage operational problems
  3. Evaluate information to assist in the management of processes for food and beverage provision.
  4. Reflect achievement within a group and personal setting.
  5. Apply a range of skills, including: application of numerical techniques, communication and literacy, problem solving, independent learning and working, working with others
