Brief Description The module builds upon the learning from level II and III, enabling students to take a longer-term strategic view of the restaurant industry, evaluating and analysing existing market conditions in order to interpret opportunities for the future.
Indicative Syllabus This module studies and interprets real life scenarios to build composite pictures of existing businesses and practices in preparation for analysing and evaluating the potential success of new business opportunities.
Learning Outcomes

i. Knowledge and Understanding
On completion of this module students should be able to:
a) Evidence the ability to critically assess the current market place and the diversity of operators currently comprising the restaurant industry, in relation to scope of operation and profitability.
b) Critically evaluate business opportunities involving both new concepts and existing concepts currently underutilised.
c) Critically assess the complex financial issues involved in capital investment in the restaurant industry, including assessments of financial risk.
d) Critically evaluate the non-financial risk elements involved in restaurant development, new or existing, in relation to brand identities and opportunity cost.
e) Demonstrate a comprehensive and critical understanding of business ethics in relation to both suppliers and customers.
