Brief Description This module studies in depth the wide range of products available in restaurants, bars and similar outlets. The module seeks to provide students with vocational training in product knowledge of wines, spirits and other alcoholic beverages. The content is similar to the syllabus of the Wine and Spirit Education Trust's Intermediate Certificate course for which examination students are entered. A fee to cover tasting samples, field trip, course materials and external examination is payable upon commencement. Price on application to Short Courses Office.
Indicative Syllabus
Learning Outcomes

i. Knowledge and Understanding
On completion of this module students should be able to:
a) understand the importance of the world's main wine and spirit producing countries and their significant features, eg. climate, soils, grape varieties
b) understand the principal features of viticulture and vinification
c) interpret alcoholic beverage labels effectively
d) undertake simple organoleptic tasting
e) give advice in the choice, service and responsible consumption of alcoholic drinks
f) Understand production methods of spirits, liqueurs, beers

Students will be given the opportunity to develop their key skills in the following areas during the course of this module:
